Is the 8GB internal memory of the ADAM expandable by changing the eMMC flash chip?

No

If the ADAM is attached to a PC (USB-USB) could it act as a storage device of the PC, ie: would look like a removable device to Linux/OS X/Windows?

When connected via USB to a Linux OS, ADAM just appears as two additional folders. (Or one additional depending on how the memory is being used by whichever ROM you installed)  No issues with moving files back and forth between the device and host.
